Mug Madness! Part 2.

Savoury snacks whipped up in minutes!

Whilst we loved tucking into our sweet mug treats over the Christmas period, we have come to the conclusion that it is time for the over-indulgence to stop. January brings with it new outlooks, new jobs and new opportunities and for many of us it also brings with it NO TIME. So we are back with our Mug Madness to give you three recipes that use a few simple ingredients, a microwave and require almost no preparation at all. Whether you a student studying for exams, a mum trying to negotiate the beginning of term time or just exhausted from a long day at work, we have something that is fresh, easy, and of course, most importantly, DELICIOUS!

Recipe One

Recipe Two: Egg Fried Rice

First up is an old takeaway classic, egg fried rice. However, this recipe moves away from the quintessential greasy Chinese food you would receive on a Friday night and combines nutritious ingredients with a filling meal. This really does bring a whole new meaning to the words: fast food!

Ingredients

1 cup instant microwave rice
2 tablespoons frozen peas
2 tablespoons chopped red pepper
½ onion, chopped
small pinch of shredded purple cabbage
1 large egg
1 tablespoon soy sauce
½ tsp sesame oil

Method

Measure out your rice and place into a large mug. Cover it with cling film and prick it until there are a few holes to let out the steam. Microwave for one minute

Cut up your vegetables and mix them into your rice. Cover the mug again and microwave for a further minute. You can customise your fried rice with whatever vegetables you like as long as they fit in the mug! So why not chuck in some broccoli or pak choi?

Whilst the veg is cooking in the microwave, beat the egg and mix in your other ingredients. Once the microwave is done, carefully remove it and pour the mixture over the rice and mix it all together so that the rice and vegetables are coated with the egg.

Cover again and microwave for a further 35-40 seconds. If the egg looks fully cooked then stand the mug for a minute and you are good to go!

Recipe Three: Mexican!

mexican-mug-recipeWho doesn't like Mexican food? We know of almost no one who isn't partial to a bit of guacamole, a burrito or some huevos rancheros! So we thought why not combine our love of everything mexicana with a mug recipe that can be whipped up in minutes!

Ingredients

Cooked brown rice
Canned black beans
Shop bought or homemade salsa (tomatoes, chillies, coriander, salt, a pinch of sugar, lime and an onion is our favourite!)
A few pinches of salt
Your favourite tortilla chips
Diced avocado
Cheddar cheese
Sour Cream

Method

Simply layer up the brown rice, black beans and salsa in a mug and place in the microwave on a high heat for one minute. Season with salt and a touch of pepper

Then its time to go topping crazy! Break up your tortilla chips, throw in your avocado and sprinkle with cheddar. Put the mug back in the microwave for a quick 15 seconds and there we have it, all the best parts of Mexican food at your fingertips in under 90 seconds!

Recipe Four: Quiche

omelette-mug-recipeFor our final recipe, its another classic that has been give the Mug Madness twist, courtesy of the Full Thyme Student blog. The humble quiche is a family favourite and now you can have it from ingredients to table in the blink of an eye!

Ingredients

Cherry tomatoes
One slice of bread
Salt
Pepper
Whole milk
Grated cheese
One large egg
Chopped spring onions

Method

Crack the egg into a mug. Try to use one that is quite deep so that the quiche can get some height, wide and shallow will not work here!

Add in the milk and melted butter and your seasoning. Whisk all the ingredients together until they are fully mixed. Now all you have to do is just add your chopped tomatoes, cheese and herbs.

Tear the bread up into small pieces and layer those throughout the mug.

Now simply put your mug in the microwave for a minute!
