Mug Madness! Part 1.

4 quick and easy mug cake recipes for those on the go!

The humble mug.

Now, most of us reach for ours in the morning with one thing in mind: hot drinks. But what if you knew that your favourite mug could actually replace a whole number of other utensils in your kitchen and provide you with a meal? Well you are in luck because we have discovered through intensive market research (yes we ate everything), that your mug can actually be your new culinary best friend!

These recipes are for those with a sweet-tooth, so pretty much the entire population! From nutella cake to cookies, blueberry muffins to a Thanksgiving inspired Pumpkin Mug Pie, we've got dessert covered and all you need are the ingredients and a microwave. That's right, no oven, no washing up and no time wasted! These four mega-mug recipes will make you view this once-single use item in a completely different light. We can't wait to start cooking and eating, but that goes without saying.

Recipe One

I mean who doesn't go Nutty over Nutella? You can often find us spoon in hand with a whole pot of the thing (shush don't tell anyone). So we did some of our finest market research and put our Nutella Cake recipe to the test and we can confirm that we had some very happy customers, as you can see below. We further concluded that Victoria Eggs mugs are the PERFECT size and shape to get the most out of your cake, so why not grab one of those as well!

Recipe Two

I have often been guilty of nabbing at least 3 cookies from the tray before they've even cooled down and am always being given a wrap across the knuckles. But not to worry, because I have found this recipe by blog No. 2 Pencil that will satisfy all my cravings. Do you think it's okay to have one mug full of cookie and the other of hot chocolate? That's kind of like tea and biscuits isn't it...We have our Saturday night sweet treat sorted with this speedy option, total time from ingredients to sumptuous pudding, SIX MINUTES!!

Prep time:5 mins

Cook time: 1 min

Total time: 6 mins

Chocolate Chip Cookie in a Cup – the original microwave cookie recipe

1 Tablespoon Butter

1 Tablespoon Granulated White Sugar

1 Tablespoon of firmly packed Dark Brown Sugar

3 Drops of Vanilla Extract

Small Pinch of Kosher Salt

1 Egg Yolk (discard the egg white or save for different recipe)

Scant ¼ of All Purpose Flour (slightly less than ¼ of a cup)

2 heaping tablespoons of Semi Sweet Chocolate Chips

Start by melting your butter in the microwave. Butter should just be melted, not boiling.

Add sugars, vanilla and salt. Stir to combine.

Separate your egg and add the yolk only to your cup. Stir to combine.

Add flour, then stir again. Measure a scant, slightly less than full, ¼ cup of all-purpose flour.

Add the chocolate chips, and give a final stir. Now your mixture will look like cookie dough.

Cook in microwave 40-60 seconds, start checking for doneness at 40 seconds. Mine takes 5

seconds. Do not cook past one minute, just like a regular cookie, this will continue cooking as it

cools. If the cookie is dry or cake like, try less time.

Serve warm.

Recipe Three

Blueberries are a breakfast favourite of ours because of their delicious taste and high levels of antioxidants. The breakfast of Kings however is the Blueberry Muffin and we have found a recipe that allows you whip ones of these delicious fruit-laden cakes in minutes. Not only will you have delicious mouthful after delicious mouthful, there's absolutely no mess involved.

Ps. one more thing, it's a single serving so you don't even have to share. Pure bliss!

1/4 cup flour

2 tbsp granulated sugar

1/8 tsp baking powder

1/16 tsp baking soda

3 tbsp fat free milk

1 tbsp vegetable oil

7 fresh blueberries

Streusel topping:
1 tbsp cold butter, chopped into tiny pieces
1 1/2 tbsp flour

2 1/2 tbsp brown sugar

1/8 tsp cinnamon

1. Mix everything listed in muffin ingredients except blueberries into a microwave safe mug with a small whisk. Drop blueberries in, spreading them out. In a small bowl, mix streusel ingredients, until butter pieces are completely coated in the flour, sugar and cinnamon. Sprinkle small crumbles of streusel on top of muffin batter, spreading out evenly across surface.

2. Cook in microwave for about 1 minute. Let cool for a few minutes before eating.

Recipe 4

We've been inspired by our friends over the pond this Thanksgiving and are salivating over this Pumpkin Mug Pie! Using seasonal produce in combination with chocolate, cream and toffee, um YES PLEASE. That is certainly making us give thanks to the Dessert Gods and we just can't believe that with the humble mug you can do away with the stress of making a pie crust in seconds! This is the perfect recipe to make with the kids over this day of celebration. Share the love (and the turkey) today!

Pumpkin Mug Pie

Note: If you want a crust, try moistening some graham cracker crumbs with some butter and pressing them into the bottom!

3/4 cup pumpkin puree (I used canned, naturally)

1/4 cup heavy cream

1 egg yolk

1/4 cup sugar

1/4 teaspoon cinnamon

A pinch of ginger

A pinch of cloves

A pinch of salt

1/2 teaspoon vanilla

Combine all the ingredients in a large mug. If your mug is too small, try two mugs or a microwavable bowl. Turn the microwave power down to 50% power. Cook for 6-8 minutes or until a knife inserted comes out pretty clean. You could also try doing it at full power for less time. If you do that, I would start with maybe 2 minutes and then try every 30 seconds till it's done. Cool in the refrigerator (or freezer) and top with whipped cream and toffee bits

So there we have it, four sweet treats that go from raw ingredients to amazing desserts in a matter of minutes. We know that whether you are four or forty, that these warming and hearty puddings are a practical and fun way of cooking, and most importantly, eliminate all the cleaning up before you even have the finished product. You know where to find us, hunched over all of these with a set of spoons and some friends, diving in and licking those mugs clean. Move over hot drinks, it's mug madness all the way!
