Brits, in particular, are brilliantly known for their appetite for condiments and certainly know how food just wouldn't be the same without them. Some British favourites or rather essentials to any meal include the always needed Tarter Sauce, English mustard, Brown Sauce, Mint Sauce, Horseradish Sauce, and of course HP Sauce. For a guaranteed British favourite we turned to Minno Kitchen, a British company mad about condiments, for a marvellously delicious red onion and rosemary marmalade recipe. To fill your 1ltr Kilner jar you will need:
- 3kg red onions thinly sliced
- A drizzle of sunflower oil
- 400g dark brown sugar
- 12 cloves of crushed garlic
- 20 sprigs of rosemary
- 600ml balsamic vinegar
- A heavy bottomed saucepan
Here's how to make it…
- Sizzle the onions in the sunflower oil on a low heat until just starting to soften
- Add all the other ingredients & give the mixture a good stir
- Wash your Kilner jar & pop into a low oven for 30 minutes to sterilise
- Leave the pot uncovered & cook on a low heat for 30-40 minutes until all the liquid has been absorbed – you should have a gorgeous stickymarmalade
Minno Kitchen always eats this lovely British marmalade with grilled goats cheese, dolloped next to a pork pie, to top a tart or with a spoon straight from the jar. If you fancy your condiments perhaps a tad fruitier, try filling your Kilner jars with a delectably sweet strawberry jam. Here's the perfect recipe for a jar full of delightful deliciousness. You will need:
- 900g (2lb) fresh strawberries
- 800 g (1 3/4lb) casters sugar
- 4 tablespoons lemon juice
Method:
- Add all of the strawberries into a Kilner jam pan and crush with a potato masher
- Add the sugar and lemon juice. Stir over a low heat until all of the sugar is dissolved
- Increase the heat to high and bring the mixture to a boil
- Continue to stir and boil until the mixture reaches 105 degrees C
- Cool slightly and transfer to hot, sterile Kilner jars, leaving about 1cm space between the lid an seal
- Keeps for 6 months in a cool, dry cupboard
- Once opened, refrigerate and enjoy!
